Amazing Vegan Lunch Box

tofu lunch boxTrying to fix something interesting to take for lunch as a Vegan can be challenging. Here’s a great way to fix a couple of lunches and it really doesn’t take very long to make.
This Vegan Lunch  Box includes a protein like baked tofu,or your favorite Vegan protein, Ramen Noodles, Roasted Veggies and a Vegan Brown Sauce.
Step 1: Get a box of firm or extra firm tofu. Press out a little excess water from the tofu. Cut into long pieces about 1 inch square by the entire length of the tofu. In a baking dish add a drizzle of olive oil and add the tofu. Next I like to sprinkle the tofu with some of my favorite herbs like garlic and basil. Then turn over all of the pieces of tofu and sprinkle with a little pepper and drizzle sriracha sauce and real maple syrup on this other side of the tofu. Then bake and a 350 degree oven approximately 20 minutes. Remove from the oven and cool. This will be the first layer of your Vegan Lunch Box.
Step 2: Roasted Veggies… Pick some of your favorite vegetables and roast them in the oven at 400° for about 20 minutes. I use a cookie sheet covered with healthier parchment.Carrots are great roasted and you can roast them whole (small diameter carrots work best or cut them in half lengthwise) or you can take a potato peeler and peel them into lots of little curls. Toss with a small amount of olive oil. Take the freshly peeled carrots or pile up the curls and roast them. Next you could take a zucchini and slice it into small slices, toss it with some herbs and olive oil and put that on the pan to roast. Feel free to use any veggies you happen to love to roast for your Vegan Lunch Box. Other vegetables that would be good would be broccoli cauliflower or onions.
Step 3: Boil some water and cook your Vegan Ramen according to directions. When it’s done drain and toss with a tiny bit of olive oil to keep it separated. You could also add the juice from the baked tofu baking dish! I really like Organic Millet and Brown Rice Ramen made by Lous Foods.
Step 4: Make a healthy Chinese brown sauce. Start with 1/3 of a cup of low sodium non GMO soy sauce or organic coconut liquid aminos (a soy substitute that is great). Add to saucepan along with a third of a cup of vegetable stock or water, 1/4 of a cup of real maple syrup or brown rice syrup, a couple of cloves of garlic crushed or minced and one or two teaspoons of grated Ginger. Then mix in 2 teaspoons of organic healthy cornstarch or arrowroot powder. Mixed together and then heat over medium heat until it thickens. Should take 4 or 5 minutes.
After all of these steps are completed you can assemble your lunch box. I love this glass Lunch Box container I found on Amazon! I like to start at one end with tofu and then add long rows of each vegetable and then noodles at the other end. After that take your brown sauce and drizzle it from one side to the other across the middle. you can mix it together if you want when you eat it but it looks really pretty this way and it stays nice. This can be eaten cold at work or heated up. It can also be used for a quick dinner. this is a recipe for two or three depending on your appetite. You can increase the recipe and have it for a couple of days. You can also use different vegetables in each lunch box. If I have green onions I sprinkle a few chopped green onions on top to make it extra special. Hope you love this as much as I did.

Be A Vegan for 2 weeks. Help clean out your blood vessels!

I recently watched a show called “The Game Changers”.

I watched it on Netflix and I would say that it motivated me enough to become a Vegan for a while… I’m not claiming to be a Vegan forever but I’m trying to do it as long as I can to see if I can help clean out my blood vessels from all of my life’s indiscretions. Okay so I have been doing it for two months now and I would say after week one or two the annoying pain in my lower back from wear and tear stopped being there. I can only a attribute this to my Diet. And it may just be lack of certain foods that are known to be the cause of inflammation… Like white flour and sugar. Eating healthy foods like beans and whole grains and Fruits and veggies in any way you want is the focus of Vegan… So, being a vegan means eating no animal products, which includes eggs, milk, cheese and meat of course.

It does sound tough to do… but there are many products that can help you with this. When I decided to become Vegan… the hardest part for me was replacing Cheese. I would have to say that I found a product that I really like and highly recommend.

Anyway, I love their Cream Cheese and their Mozzarella Cheese and it helps me make things I love to make that include cheese. That helped me a lot with being a Vegan. I encourage you to try this if you want to make some improvement in your life.  I think anything you can do to reduce inflammation is helpful to your overall quality of life!

If you decide that you want to try to be a Vegan… Try to do this for two weeks and see if you feel more energetic… I think that this is a good test for this particular idea. I really do think being a Vegan will have a healthy effect on you… and you could see results that you’re surprised to see. In the next few blogs I’m going to talk about things I’ve done to make it easier to be a Vegan. It’s hard to be a vegan in our eating out world. But there are a few things you can do…Also I will be adding recipes and the next few blogs so follow me if you want to see them… Or check in from time to time.

Amazing Vegan Frozen Pizza

I recently watched the movie “The Game Changers” on Netflix. It’s about becoming a Vegan. I decided that I would try being a Vegan for a while just to … let’s say clean out my blood vessels. It’s almost like a cleanse and I don’t know how long I will do it…but I’ve been a Vegan for a month. I have to say that I feel better than ever and aches and pains are no longer a problem. I’m eating super healthy… no animal products at all.. but one of my hardest things to not eat is cheese… especially when it comes to Pizza. …And although I can make it from scratch I thought I would try to look for a frozen pizza that was Vegan for times when I really don’t feel like cooking. I went to my local groceries and found pretty much nothing that was Vegan in the frozen pizza aisle. There were many pizzas that were gluten free and dairy free, but none of them were only dairy-free or Vegan. I went to Whole Foods and finally found something that looked like it might be worth trying. After making this pizza from American Flatbread, called Vegan Harvest, I am sure that it is my favorite Pizza like product in the frozen food aisle. Unlike other pizzas the directions recommend that you defrost the pizza for 30 minutes while the oven heats up. During that time I diced and sautéed a small onion and a half of a diced red sweet pepper. I also tossed in a 1/4 of a cup of chopped baby spinach. I sauteed the onion and pepper until almost done in threw the spinach the last minute or two. I topped the pizza with the mixture. Then I cooked it for the allotted time. This flatbread/Pizza was amazing and I highly recommended it. The Vegan cheese was excellent. It will be on my menu at least once a week!

The Best CBD Oils Reviewed (part 2)

Waking up with no lower back pain after sleeping all night is amazing. This is the 2nd review of The Best CBD Oils. I will be discussing my experience with JOY Organics CBD OIL, Premium Hemp Salve and Softgels. I am continuing my quest to determine the Best CBD Oil products and sharing this info with you.

JOY Organics was started by a Woman named Joy Smith who became interested in developing a line of these products after her great success in dealing with a severely strained shoulder muscle and insomnia related to the pain and discomfort. Their products are all Organic which is very important in choosing a CBD Product. I purchased a Bottle of CBD Oil called Joy Organics Premium Hemp Tincture made with phytocannabinoid- rich oil. It comes in several flavors and I bought Lemon. It tastes very mild but contains 500 mg per ounce of Hemp Extract, 15 mg per serving of Hemp Extract and 16.67 mg of CBD per serving with 30 servings per bottle. They also sell higher levels of CBD, up to 1500 mg in a bottle. They have a sample pack that costs $7 that contains a very small container of Premium Hemp Salve, 2 pkts of 2-25mg softgels (NonVegan) and a CBD Energy Drink.

The Soft gels come in 10 mg and 25 mg strength and they are 2x more absorbable than a standard tincture oil. That means you’d have to take 2 times more of other CBD oil based products to get the same absorption.

So, I started to test them on night #1 to see if would help with my lower back pain at night and my insomnia. I took a serving of the Lemon flavor Premium Hemp Tincture (CBD oil). It helped me relax and fall asleep easily. I woke up about 4 hours later with some lower back pain. I decided to try the Premium Hemp Salve. It worked well and I went back to sleep. The next morning, I woke up with no back pain for the first time in a year. I was excited about that!

The Best CBD Oils Reviewed

First of all you may wonder why you would want to use CBD oil. CBD stands for Cannabidiol which is one of the primary natural cannabinoids found in the Hemp plant. This is an amazing natural chemical which helps our body deal with chronic Pain, Depression, Anxiety, Stress and Inflammation. CBD has been used for certain Seizure Disorders for some time and the FDA has approved a prescription version of CBD for this use. And I am happy to say that it did exactly what I needed… especially with sleep, anxiety and also lower back pain. I loved the Citrus taste and Stevia made it taste good. At that time the bottle’s instruction was to put 1 ml under your tongue, up to 3 servings a day. Now that they are affiliated with Young Living it says topical use only. I believe that it is the same product and I find that a bit confusing because Young Living has Oils that are approved to use internally. Take care of your DNA with Positive Thoughts!

You can Improve every part of your Life with your Thoughts! Or you can destroy your Life with your thoughts. It’s important to remember that you have the power to create the Physical and Emotional Health that you desire by paying attention to your Thoughts. Your Thoughts are very powerful! I have always believed that you can change your Life by becoming aware of your thoughts, embracing Positive Thoughts and letting go of the Negative ones. And although it is true that you can’t control everything that happens to you, you can control your reaction to it. And that has an impact on your Health and Well Being.

Recently I have been reading a Book by Dr Caroline Leaf called “Switch on your Brain” and I wanted to share with you some of the information that I thought was fascinating.
The Book refers to the Mind Body Connection and how our thoughts directly affect our Physical Well Being.

~ Research shows that 75-98% of mental , physical and behavioral health comes from one’s thought life.
~ DNA actually changes shape according to our thoughts.
~ Research* shows that thinking and feeling anger, fear and frustration caused DNA to change shape.
~ Due to our thoughts and feelings the DNA responded by tightening up and becoming shorter, and switching off DNA codes which reduced the Quality of Expression.

“Quality of Expression” means how well our DNA does what it’s supposed to do and relates to which genes are turned on and off and how they well they work. All of that, in part, depends on our thoughts… So when we say we feel shut down by Negative Emotions it kind of makes sense.

~ Negative Thoughts lead to Stress which affects the Body’s ability to Heal itself.
~ This can all be reversed by Positive Thoughts of Love, Joy and Gratitude.Becoming aware of our Negative Thoughts is the first step. When you become aware of a Negative Thought, ask yourself if you can let go of it or reframe it. Sometimes looking for the Positive in any situation helps. Remembering things that you cause you to feel gratitude can also help you change that Negative pattern of thinking. It’s very important to notice when you are engaging in Negative Self Talk or holding onto Negative feelings. Just tell yourself to “Stop” and think of something that makes you happy or engage in Positive Self Talk…whether you believe it 100% or not. Positive Self Talk can be something simple like thinking ” Everything is OK, everything is Fine.” or ” I am thankful for all of my Blessings.” Positive Self Talk is very Powerful! And remember that giving Negative Energy to any situation, never helps and it can make you sick in both Mind and Body.

This also relates to messages that we give to ourselves… like…” I’m not very Sensuous.” Thinking of yourself as a Sensuous Person is all it takes to begin to change that mindset…

Mindful Forest Breathing

Mindful Forest Breathing… Forest Breathing is all about being Mindful and being out in Nature. You don’t have to have a Forest to do this… Just go outside and find some green space away from the noise and hubbub of everyday life. You will feel more connected and more Sensuous when you stay in touch with Mother Nature. This is a 5 minute exercise for when you only have a few minutes to spare but remember that minutes add up and 5 minutes done regularly adds up.


Mindful Meditation –  A 5-Minute Meditation Practice for Forest Breathing


Find a comfortable place to Sit.

Close your eyes, and rest your open hands, palms up, on your knees.


Minute 1: Deep Breathing.

Begin by Following your Breath in through your nose and out through your mouth.  Inhale for the count of 4, then Exhale to the count of 6.  Become aware of how your body feels as you sit there with your eyes closed.


Minute 2:  Find your Natural Breath . . .

Stop Counting and feel the Pace of your Natural Breath . . . feel your Body Rising and Falling.  Become aware of how your body feels as you sit there being Still.  This is Mindful Breathing . . . becoming fully aware of your Breath as it moves in and out of your Body.


Minute 3: Continue Mindful Breathing being fully aware of your Breath.

If thoughts come, just look at them, and then imagine them floating down a river, or put them on a cloud and watch them gently float away.


Minute 4: Slowly stop Focusing on your Awareness of your Breath and just be Still.

There is nothing that you have to do.


Minute 5: Reorient yourself to your surroundings.

Adopt an attitude of Mindful Gratitude. Think about something that you are grateful for. Open your Eyes, and carry this peacefulness along with you today.


Forest Breathing for 20 minutes.

You can go through the steps of Mindful Meditation. You can stay in each phase as long as you wish. Deep Breathing in the Forest increases the Oxygen in your Body, so be sure to do that phase a bit longer than 1 minute if you can.  The Trees and Plants are creating Oxygen for us, and we give them Carbon Dioxide. It’s a really beautiful arrangement. Feel gratitude for the Trees, and Feel their Gratitude towards you.  I believe that the Trees are out there being still, breathing and meditating . . . we can learn from them. Find a place in the woods and begin.

Sensuous Guilt Free Dessert!

So last night I wanted to make a dessert that was guilt-free so I took some plain Greek yogurt and added some stevia extract and Young Living Orange Essential Oil to make it sweet put it in a bowl and added fresh blueberries and dried cranberries, in the few nuts and some dark chocolate.
